5 pounds potatoes (I like russet potatoes)
1 tablespoon salt
2 cups celery - diced (about 10 ribs)
2 cups onion - diced (about 3 medium)
8 hard boiled eggs (7 diced and 1 sliced)
2 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried parsley (certainly can use fresh)
3 cups Hellman's mayonnaise

Place unpeeled whole potatoes in a pot and cover with water. Add 1 tablespoon salt to water. Once the water starts to boil, cook the potatoes about 15 minutes. Be sure to test with fork - you don't want to over cook the potatoes or undercook for that matter. If the fork goes in easily, the potatoes are done. When done, drain and let cool.

Peel the potatoes. Once peeled, cut the potatoes into bite size cubes.

Mix in the diced celery, diced onion, diced eggs, salt, pepper and parsley. Add the mayonnaise and mix.

When you have it all mixed and in your serving container, top with the sliced egg.

Note: the amount of mayonnaise may need to be adjusted depending on the potatoes used, the humidity, etc.
