1 cup of sugar
1 cup of shortening 1/2 butter, 1/2 crisco
1 cup of milk
1 teaspoon good vanilla
1 room temp. large egg
3 ½ cups all purpose flour
2 teaspoons of cream of tarter
1 teaspoon baking soda
½ teaspoon salt

Canned pie filling. or cooked apricots

Cream sugar and shortening very well until whipped. Add egg and vanilla and mix thoroughly. Combine dry ingredients in a separate bowl. Alternate dry ingredients and milk into the butter mixture.

Chill the dough. Roll on well floured board. Cut and place pie filling on bottom piece. place 2nd piece on the tip and seal the edges lightly.

Bake on lightly greased baking sheet or parchment paper. Bake until lightly brown.
When cool- sprinkle with powdered sugar.

Pappy absolutely loved these soft stuffed cookies. His mom, Adeline Bowden, would make these treats all of the time. These were a taste of home for Pappy. Grandma Bowden was English/Scottish, so I imagine these have that heritage. They are like tiny pies!!
