1 Stick butter
¾ C Confectioners' sugar
1 Egg
1 tsp Vanilla
2 tsp Almond extract
1½ C All-purpose flour
2 tsp baking powder
Pinch of salt
¼ C Confectioners' sugar

Pre-heat oven to 350ºF

In a Large bowl beat together butter, and ¾ cup confectioners' sugar with an electric mixer until smooth. Add egg, vanilla, and almond extract, mix well. Stir together the flour, baking powder and salt in a bowl and stir into the butter mixture until just combined. Shape the dough into 1-inch balls and arrange on a greased cookie sheet, spaced about 2-inches apart. Bake about 10 minutes and cool completely on a wire rack or plate. Pour ¼ cup confectioners' sugar in a bowl and roll cookies until completely coated.
