German Hazlenut Cookies Recipe

Ingredients: 1 cup hazelnuts 1 cup cold unsalted butter, cut into 1" pieces 1 cup sugar 1 large egg yolk 1 tsp. vanilla 2 cups all purpose flour
1/2 cup chocolate chips or chocolate of choice

Directions:Roast hazelnuts on a tray in a 350º oven for apprx. 8 minutes or until lightly toasted Immediately remove from oven and wrap in a clean tea towel. Leave for 10 minutes and then rub briskly. This will remove most of the skin.
When nuts are cool, pulse in a food processor until ground. Reserve. Put sugar into F. P. and add cold butter pieces. Process on/off, on/off and then steadily until smooth and creamy. Add egg yolk and vanilla and blend. Reserve 3Tbsp. of nuts for garnishing. Mix remaining nuts and flour and add to the food processor. Blend in quickly using on/off pulses. At this point I often turn the mixture into a bowl and stir to mix. Form dough into 2 " balls and arrange on parchment lined cookie sheets. Press down with a fork or tumbler. Bake 15-20 minutes at 350º or until just beginning to turn golden. Cool on racks.
Melt chocolate and spread the centre of each cookie with a little chocolate and sprinkle with reserved chopped hazelnuts.

Notes: This is a recipe from an early Bonnie Stern cookbook. They were given to us many years ago at Christmas by our friends, Elko and Renata. Although Elko was always the primary baker in the household, I believe that Renata was the first to make these delicious treats. They continue to be Doug's all-time favourite cookie.
