BATTER:
1 1/3 cup sifted all purpose flour
1 tsp salt
5 beaten eggs
1 1/2 cups water

FILLING:
2 eggs
6 tbsp sugar
1 1/2 cups dry cottage cheese/farmer's cheese
2 tbsp + 1 tsp all purpose flour
grated rind of 1/2 of lemon
1 tsp vanilla

BATTER:
1) Mix salt, eggs, and water.

2) Stir in flour. Mix until smooth - the batter should coat a spoon when dipped in.

3) Slightly grease a flat pan. Spread 1/4 cup of batter into the pan, and swirl around to make a thin pancake.

4) Cook on low heat (one side only) until the top is dry.

5) Once dry, gently remove from the pan and flip over on a dish towel.

FILLING:
1) Beat the eggs.
2) Add Sugar. Mix.
3) Add the rest of the ingredients & mix.

ASSEMBLY:
1) Place 1 tbsp of filling in the center of the pancake on the cooked side.

2) Fold up to form an envelope, so that both sides are folded inward, towards the center.

3) Once sealed, fry them on low heat until cooked through and browned. Watch carefully so they don't burn!
