Ingredients: Meatballs • 2 lbs ground beef • 2 Tbsp onion, grated or finely diced • 2 eggs • ½ cup long grain white rice • 3 Tbsp Worcestershire sauce • 2 tsp kosher salt • 3 tsp garlic powder • 2 Tbsp Dijon mustard • 1/3 cup heavy cream • 4Tbps Italian bread crumbs Sauce • 2 10.5 oz cans condensed Tomato Soup • 2 cans water or broth (use the tomato can) • 4 Tbsp Worcestershire sauce • 2 tsp brown sugar • 2 tsp red wine vinegar

Directions:1. Mix all the ingredients for the meatballs together and form into 3-inch meatballs and place on cookie sheet spaced about ½ inch apart 2. Mix the sauce ingredients together and stir well to combine. Pour into the Insta-pot and turn on to sauté mode to start the sauce warming up. 3. When the sauce is starting to simmer, stir it and carefully add the meatballs to the pot. 4. Close the lid of the instapot and make sure you set the steam release knob to sealing position. Cancel the sauté mode. 5. Press the pressure cook button, and then the + or – button to choose 25 minutes. 6. When the cooking cycle ends, let the pot sit and naturally release for 15 minutes. Then manually release the remaining steam until the pin in the lid drops. 7. Open the lid and serve the meatballs with sauce over them. |
