½ cup salted butter
1 cup granulated sugar
1 egg
½ teaspoon vanilla extract
¼ teaspoon almond extract
⅓ cup unsweetened cocoa, preferably Ghirardelli
1½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 teaspoon instant coffee or espresso powder
⅔ cup almonds, coarsely chopped and toasted
⅔ cup white chocolate chips
Powdered sugar

1). Make sure all ingredients are room temperature before beginning. Preheat the oven 350 degrees. Line a cookie sheet with parchment paper and set aside.

2). In the bowl of an electric mixer fitted with the paddle attachment, on medium-high speed, cream the butter and sugar until light and fluffy, about 2 to 3 minutes. Beat in egg, the extracts, and the cocoa and mix for 1 minute. With the mixer on low, gradually add the flour, salt, soda, and coffee. Finally, mix in the almonds and chocolate chips.

3). Roll the dough into teaspoon-sized balls in the powdered sugar so that the dough has a thick layer of sugar. Place the cookies on the prepared cookie sheet and bake for 15 to 20 minutes.

These dark moist chocolate cookies are filled with bits of white chocolate and almonds. They are great served with coffee!
