I box of Soli or Odense almond paste
I/4 cup of confectionery sugar
1 egg white
3 drops of almond extract
A cup of pignoli nuts to coat the balls of dough

Directions:
Directions:
325° for 12-15 minutes on a parchment-covered baking sheet
Coarsely tear up a box of almond paste into a food processor. Add the egg white and sugar and extract and mix until all blended up. It will be sticky. It may be necessary to wet your hands to roll out the one TBSP balls and roll them in a small bowl of pignoli nuts to coat.
This will make one dozen cookies
Place cookies on baking sheet and bake until pale gold, about 12-15 minutes. Do not over bake. Sprinkle with confectionery sugar
