Ingredients:  
Wash young beets.
Cook whole until tender. Pierce with fork to test- if they fall off they are tender.
Drain, reserving 1 cup of the water beets were cooked in.
Slice the beets ( not too thin) and pack into jars.

Directions:
Directions:
Take 1 cup of beet water
1/2 c vinegar
1c sugar
Pinch of salt

Combine all in a sauce pan and bring to a boil.
Pour brine into packed jars and seal right away.
