1 cup sugar
1 cup margarine (soft)
1 cup pumpkin
1 egg
2 ½ cups flour
1 tsp baking soda
½ tsp salt
2 tsp baking powder
1 tsp vanilla
1 tsp cinnamon

Directions:
Directions:
Cream sugar and butter together. Add pumpkin and egg. Beat well.
Add flour and remaining ingredients.
Add vanilla last and blend thoroughly.
Before baking, flatten dough balls slightly with glass bottom with sugar on bottom of glass.
Bake at 375º for 10-15 minutes

ICING for PUMPKIN COOKIES
2 tbsp melted butter
4 tbsp brown sugar
2 tbsp milk
½ cup finely chopped pecans
1 tsp vanilla
Powdered sugar to thicken

Combine all ingredients EXCEPT vanilla and heat on stove till all hot and melted. Remove from heat and add the vanilla. Next, add powdered sugar to mixture until thick. Spread on cookies. Icing sets quickly.
