2 cups milk, almond milk, or coconut milk
1/4 cup butter
2 eggs, slightly beaten
1/2 cup sugar
1 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp salt, optional
1/2 tsp vanilla extract
6 to 8 slices bread (about 1-1/2 cups)

1/2 cup raisins, if desired

1. Preheat oven to 350ºF. Lightly grease 9" x 5" loaf pan with butter or oil.

2. Lightly toast bread slices, and then tear into 1" pieces. Pour into loaf pan.

3. In a 2-quart saucepan, heat milk, sugar, and butter over medium heat until butter is melted and milk is steaming. Stir occasionally to help melt the sugar and combine.

4. In a large bowl, whip eggs with a whisk. Add cinnamon and salt. Then add hot milk and butter mixture. Stir thoroughly to combine. Quickly pour liquid over bread pieces in loaf pan. Sprinkle additional cinnamon on top.

5. Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean.

This has always been a favorite in my family. I've loved it since I was a child. Bread pudding dates back to at least 13th century England, and it was known as "poor man's pudding." My mother used to add raisins to half of the bread pudding.

It's an easy way to use up stale bread and the heels. You can collect the leftover bread in a container in the freezer, and when you have enough collected, use it to make a bread pudding.

To speed up preparation time, simply butter the bread before tearing it into pieces. Then add the cold milk and other ingredients to the beaten eggs, and pour onto the bread pieces. If you do this, add at least 15 additional minutes to the baking time.
