20 lbs. apples
2 qts. sweet cider
4 c. sugar
1 Tbsp. cinnamon
1/2 tsp. ground anise (Grandma preferred 1 tsp. anise seeds)

Peel and chop your apples into semi-uniform pieces.
Add the apples, cider, sugar, and spices to a large baking or roasting pan. Cook in moderately low oven at 325º and bake 1 1/2 hours or until thick. You may need to blend the apples with an immersion blender, or also transfer in batches to a blender or food processor if you want a smoother spread. Now it's ready for the jars.

Prepare water bath canner by filling it with water, so that there will be at least 1 inch of water over the tops of clean and sterilized jars. Ladle the warm apple butter into jars, leaving 1/4 inch of headspace. Remove any bubbles from the jar. Use a wet clean rag and wipe the rim of the jars to make sure they are free of any delicious apple butter. Place a hot clean lid on the jar and then a ring. Tighten the ring to fingertip tight. Using canning tongs, add jars to the boiling water, making sure there is at least 1 inch of water over the tops of the jars for safe canning.

Process half-pints for 10 minutes, or 15 minutes for pints. Remove the canner from heat, and let sit for 5 minutes. Remove the jars from canner and let set undisturbed for 12-24 hours. Make sure all jars have sealed. If the lid bows a little bit, put that in the fridge and use it within 3 weeks. Store in a cool dark place for up to a year.
