Ingredients: 3/4 cup granulated sugar 3/4 cup packed brown sugar 1/2 c butter and 1/2 c crisco 1 teaspoon vanilla 2 eggs 2 1/4 cups flour 1 teaspoon baking soda 1 teaspoon salt 1 cup semisweet chocolate chips + 1/2 c mini M&Ms 1 cup coarsely chopped walnuts See below for other options.

Directions:In large bowl, beat granulated sugar, brown sugar, butter, vanilla and egg with electric mixer on medium speed or mix with spoon until well blended. Stir in flour, baking soda and salt (dough will be stiff). Stir in chocolate chips and nuts. Chill. Drop dough by rounded cookie tool about 2 inches apart onto parchment cookie sheet. Convection bake 325 F, 11 minutes. Bake 375ºF, 8 - 10 minutes, 350ºF for 10 min. until light brown (centers will be soft). Cool 1 to 2 minutes; remove from cookie sheet. Cool on wire rack.

Notes: TIPS There are lots of baking science behind what makes a soft, chewy cookie versus a crisp, crunchy cookie. The ratio and type of sugars used, the amount of butter or shortening, and how much flour is stirred in all make a difference. Use a 1-inch scooper make consistently round cookies. Add macadamia and white chocolate chunk, Chocolate double peanut butter (chips + crushed peanuts) Or salted butterscotch toffee (butterscotch chips + toffee chips, sprinkled with coarse salt), heath bar bits to it with the walnuts, put chocolate chips in on half and raisins in the other half. press candy-coated pieces into the dough or stir in bits of chopped mini peanut butter cups. Add shredded coconut. Cranraisins. pecans, 1/4 c Toffee Bits, 1/4 c M&M, 1/4 Andres Cream of Menthe chips, 1/2 c Ghirandelle chips. Use 1/4 milk chocolate chips, 1/4 chocolate chunks, 1/4 semi sweet chips, 1/4 white chocolate chips. I also added crushed candy canes for a holiday touch and topped them off with sea salt. Also added a dash or two of cinnamon.
