1 cup quick oats
¼ c. all-purpose flour
½ tsp. kosher salt
1½ tsp. baking powder
1 cup sugar
1/2 cup (1 stick) butter
1 tsp. vanilla extract
1 large egg

Preheat oven to 325º.

Cover baking sheet with foil- Spray with Pam.

Combine oats, flour, salt, and baking powder.

Mix softened butter and sugar together with an electric mixer on medium until it forms a grainy paste.

Add the egg and vanilla, beating until it's smooth.

Add flour mixture and stir just until blended.

Drop by ½ teaspoon onto foil 2 inches apart. (It spreads)

BAke 10-12 minutes, until lightly browned.

Remove foil, let it cool, then carefully peel cookies from foil.
