"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1.5 cup chopped onion
1.5 cup chopped celery
2 cans chicken broth
2 cans chicken broth for mixing dressing
2-3 loaves white bread, cut into pieces and set out to dry, 2-3 days before Thanksgiving
Rubbed Sage

Directions:
Directions:
Boil chopped celery and onion in 2 cans of chicken broth until tender. Drain. Add to bread. Bread should be broken into pieces 2-3 days before Thanksgiving and set out to get hard.

Add rubbed sage to the bread, celery and onion mixture to taste. Also add enough chicken broth in order to mix, but don't add too much to make it sloppy. The more chicken broth you add, the longer it takes to bake the dressing and dry up the broth!

Put the dressing in a buttered baking dish. Bake at 350º for about 45 minutes or until desired consistency.

Personal Notes:
The more chicken broth, the longer it takes to bake to the desired consistency. It has taken me a few years to figure this out. Bake the dressing early, it takes time to bake!
