12 Green Peppers
12 Red Peppers
12 Yellow Peppers
6 Onions, yellow or white
2 bunches of celery
3 Tbsp. Salt
1 qt. of Vinegar
1 pkg. of Mustard seeds
1 1/2 lbs. Sugar

Directions:
Directions:
Wash peppers and onions, slice enough to put into a food grinder. Grind all so they are diced like a relish style.
Put in a big Dutch oven pan and cover with boing water, let stand 10 minutes , then drain water.
Wash and dice Celery. Add to peppers and onion mixture.
Cover with cold water and let it all come to a boil, then drain.
In the same Dutch Oven pan mix Vinegar, salt, sugar and spices, bring to a boil, pack pepper mixture into hot sterile jars and add the vinegar solution , leaving about a 1/2 inch headspace, and seal hot.

Great on hot dogs, burgers, or just plain bread to eat! Thelma made this every year when she had abundance of peppers in the garden. We cherished every jar as it was like the best to put on our sandwiches. Well worth the efforts!
