Ingredients: 3 eggs 1½ c. sugar 1½ c. milk ¾ c. butter 3 c. cake flour 3 tsp. baking powder ¼ tsp. salt 1 tsp. vanilla

Directions: |
Directions:Cream butter and sugar together. Add eggs, one at a time. Sift flour and baking powder together. Add to batter, alternating the milk and dry ingredients. End with the dry ingredients. Add vanilla. Pour into two 9" round greased and floured pans. Bake at 350º until done. Check with a toothpick to see if done. When cooled start mixing pineapple filling. |

Pineapple Filling |

Ingredients: 2 T. cornstarch 2 c. crushed pineapple, drained 1 T. lemon juice ½ c. sugar

Directions: |
Directions:Mix the cornstarch, sugar, lemon juice and pineapple together in a small pan. Cook slowly until thick and clear. Let cool. Save 1/2 cup of filling to decorate the top of cake. Use the remaining pineapple filling between the two cake layers. Cover the sides and top with Seven Minute icing (recipe below). |

Seven Minute Frosting |

Ingredients: 1 c. sugar ¼ tsp. salt ½ tsp. cream of tartar 2 egg whites 3 T. water 1 tsp. vanilla

Directions: |
Directions:Combine all ingredients except vanilla in a stainless steel heavy-bottomed sauce pan. Place on medium low heat and beat with an electric hand mixer constantly for 5 to 7 minutes, or until icing is fluffy and stiff peaks form when beaters are removed. Remove from heat and stir in vanilla. Ice the cake and decorate top with remaining pineapple mixture. Double this icing recipe to frost this cake, or any layer cake. This recipe doubles beautifully. |
