3/4 cup all purpose flour
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
Pinch of ground nutmeg
7 tablespoons unsalted butter, softened
1/2 cup + 2 tablespoons light brown sugar
1 large egg
2 teaspoons vanilla extract
1 1/4 cups quick cooking oats

Icing

1 cup powdered sugar
1 tablespoon whole milk
1/4 teaspoon vanilla extract

Directions:
Directions:
Preheat oven to 350 degrees.
Line baking sheets with parchment paper.

In a medium bowl, whisk together flour, cinnamon, baking soda, salt and nutmeg.

Using a mixer, combine butter and sugar for 2 minutes. Mix in the egg and vanilla until combined.

Add the dry ingredients to the wet and mix until combined. Add the oats and mix.

Place 1 tablespoon sized dollops of dough on the baking sheets 2 inches apart. Bake for 9-10 minutes until lightly golden along the edges. Let cool on trays for 2 minutes, then transfer to racks to cool. Cookies must be completely cool to ice.

Icing

Whisk together powdered sugar, milk and vanilla. Icing should be thick. Add a small amount of extra milk if needed. Dip tops of cookies and place on wire racks to dry, about 2 or 3 hours.
