1 cup sugar
1/4 cup flour
juice of 2 lemons (approx 1/4 cup)
2 tsp. lemon rind
3 eggs, separated
1/8 tsp salt
3 Tbls butter, melted
1 1/2 cups milk

Directions:
Directions:
In a large bowl mix sugar, flour, and salt. Stir in butter, lemon juice, and well beaten egg yolks, then add milk. Beat with a mixer until smooth and creamy. In a separate bowl, beat egg whites until stiff. Gently fold the egg whites into the lemon mixture. Place in a buttered casserole dish and set caserole dish in a water bath. (Water should be about half way up the sides of the casserole dish). Bake at 350º for approx 45 minutes or until lightly browned and top of pudding is set. Remove from oven and let cool in the water bath.
