9" frozen pie shell
4 tablespoons of cocoa
3 tablespoons of all purpose flour
¾ cup of sugar
3 egg yolks (save egg whites)
1 cup of Milk
2 tablespoons of softened butter
1 teaspoon of vanilla extract

Meringue (optional):
5 tablespoons of sugar
½ teaspoon of cream of tartar
3 egg whites

Directions:
Directions:
All ingredients should be room temperature before beginning.

Thaw frozen pie shell, preheat oven to package direction. Once thawed, brush shells with beaten egg whites, using fork, poke holes in bottom and around sides. Bake until golden brown; set aside.

Whisk together all dry ingredients.
Beat egg yolks and milk, add to dry ingredients, stir until mixed well.
Added softened butter to the pie mix and blend well.
Cook slowly in an iron skillet stirring constantly until thickened; add vanilla flavoring. Continue to cook pie filling over medium heat stirring constantly; must be careful not to let pie filling scorch.
When thick, spoon into baked pie shells.
Top with meringue if desired.

Meringue:
Wisk together sugar, cream of tartar and egg white. Beat on high with electric hand mixer or stand mixer using (batter attachment) until stiff peaks begin to form. Once peaks form and stand, spoon lightly onto pie.

Place in oven under broiler light just until eggs brown. Remove and let pie cool to room temperature.
