1 c raisins
1 c water
¾ c shortening
1½ c sugar
2 eggs
1 tsp vanilla
2½ c all-purpose flour
½ tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
½ tsp ground cloves
2 c rolled oats (old-fashioned oats)
½ c chopped nuts (pecans)

Directions:

Simmer raisins and water in saucepan over low heat until raisins are plum, 20-30 minutes. Drain raisin liquid into measuring cup. Add enough water to make 1/2 cup liquid.

Heat oven to 400º. Mix shortening (I use part butter part Crisco), sugar eggs, and vanilla. Stir in raisin liquid. Measure flour by dipping method or by sifting. Stir together flour, baking powder, soda, salt and spices; blend in. Add rolled oats, nuts and raisins. Drop rounded teaspoonfuls of dough about 2" apart on ungreased baking sheet. Bake 8-10 minutes or until lightly browned.

Cool on cooling racks completely then transfer to airtight container.

This particular recipe was a favorite of my dad Cletus, my husband Larry, and all three of our sons. In fact, I have yet to make these and have any man not rave over them. They are moist and oh so very good. Toasting the nuts prior to putting into the dough is another tip to make these cookies go over the top! I usually use pecans but walnuts work well.
