4 large potatoes, cooked until quite soft
salt, lightly sprinkled over potatoes
about 1 T cream of wheat
1 egg
½-1 c. flour
2 c. white bread crumbs
½ c. sugar
½ c. (1 stick) butter

Directions:
Directions:
Mash potatoes well, or put thru ricer. Combine potatoes, salt, cream of wheat and egg. Add flour a little at a time until consistency of soft cookie dough. Knead dough until smooth, maybe 10-12 times. Roll about 1T of dough between your palms to make small noodles. Let them rest briefly . Bring a large pot of salted water to a rolling boil. Boil the noodles in batches, don't crowd them, until they float to top of pot. Drain and let rest while prepare coating. Melt butter in large skillet, add sugar. Add bread crumbs and stir until well browned. Add noodles to crumb mixture. Serve with sour cream and sprinkle with sugar.
