2½ C. flour
1 C. powder sugar
2 tsp. vanilla
1 C. butter

1. Mix flour and butter to a crumbly consistency. Add powder sugar and vanilla to for a dough. Knead lightly and shape a thick sausage about a foot long. Wrap and chill for at least 1 hour, until firm.

2. Preheat the oven to 400º. Grease 2 baking sheets. Using a sharp knife, cut ¼" thick slices from the dough and space them slightly apart on the baking sheet.

3. Bake for 8 - 10 min., alternating the position of the baking sheets in the oven halfway through cooking, until the cookies are cooked evenly and have just turned pale golden around the edges. Leave 5 min., then transfer to a wire rack to cool. Serve dusted with powder sugar.
