1 C corn syrup
1 T butter, softened
1/8 tsp salt
1/2 C sugar

1 tsp vanilla
3 eggs

1 unbaked cold pie shell (keep it in the refrigerator until you bake it)

1 C toasted chopped pecans (you could leave them whole)

Directions:
Directions:
Mix corn syrup, butter, salt, and sugar well with an electric mixer.
Boil this mixture and let it cool. (If it's too hot, it will cook the eggs...)

Add eggs and vanilla.

Place pecans into pie shell.

Pour filling over nuts. The nuts will float up.

This is the recipe I made the year Daisy ate the whole Pecan Pie while Casey and I went to pick-up John at Sea- Tac when he came home from Minneapolis for Thanksgiving his first year at University of Minnesota. Casey had requested Pecan Pie. John wanted Key Lime, which was cooling in the refrigerator. I made another Pecan pie and Daisy was very happy.
