Sugar Cookie
1 1/2 cup confectioners sugar
1 cup softened butter
1 egg
1 teaspoon vanilla
1/2 teaspoon almond flavoring
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Royal Icing
1 egg white, at room temperature
2 to 2 1/2 cups powdered sugar
1/2 teaspoon almond extract

Sugar Cookie
Cream sugar and butter. Mix in egg and flavorings. Blend dry ingredients; stir in. Refrigerate 2 to 3 hours. Heat oven to 375 degrees. Divide dough in half and roll out on lightly floured board about 1/2 inch thick. Place on lightly greased baking sheet. Bake 7 to 8 minutes.

Do not overcook. They may look like they are not cooked all the way, but they will continue to cook once they are out and you want them soft. Try the first batch and see if you need to cook the rest an additional minute. I always double up the recipe, it does not make very many. I also use a smaller circle cookie cutter. They do expand a bit while baking.

The icing does not taste very good by itself. But when you have it on the cookies, it helps with the sweetness of the cookie.

Royal Icing
1. Beat egg white in small bowl at high speed mixer until foamy.
2. Gradually add 2 cups powdered sugar and almond extract. Mix well.

Recipe is out of the Betty Crocker Cookbook that I grew up with. Definitely a beloved cookbook that I have used for so many years!
