1 3/4 cup of flour
1/2 tsp salt
1/2 tsp baking soda
1 Tblsp orange zest

1/2 cup (1 stick) butter
1 cup white sugar
1 egg
1 tsp vanilla
1/2 tsp orange extract (if available)
2 Tblsp of orange juice

Frosting ingredients
2 cup powdered sugar
2 tblsp of orange zest or as much as you can get from 2 oranges
1/3 cup of juice from orange

Directions:

Mix dry ingredients together including orange zest.

Cream butter and sugar until mixed then beat in egg, vanilla and juice. Stir in dry ingredients.

Drop by spoonfulls onto parchment paper lined cookie sheets. Bake at 350º for 12 to 14 minutes.. cookies will just barely be light brown around the edge when done.

While cookies are baking mix the frosting ingredients until well mixed.

After removing from oven frost with frosting while still warm, using a pastry brush if you have one or the back of a spoon if you don't.

you can use lemons instead of oranges.
