I wrote this down on a random piece of paper (a hallmark envelope) one day at Grandma Helena's house. This is what she said was her recipe for pierogi. I lost that envelope but just found it recently. So let me memorialize her words. I took them down as she spoke.

Boil meat
( what kind of meat? Beef sirloin. 1 lb for roughly 5 doz)
with onion, spices (I didn't note what the spices where)
for 1 hour

Sautee onions and add sauerkraut (how much sauerkraut, 1 jar)
Canned mushrooms (save water to add if needed)

Add meat and simmer 1/2 hour

for dough:

1 C flour = 1 doz pierogi

4 C flour
Margarine
2 eggs

4 Tablespoons margarine melted with 2 eggs beated. mix together. Add 1 Cup warm water then flour. knead

Boil in salted water for 15 minutes

This is what I wrote down as Mom was talking. So just to memorialize.
