1 c. almond flour
1 c. oat flour
1 tsp. baking soda
1/4 tsp. salt
1/4 c. solidified coconut oil (refrigerate to solidify)
3 Tbsp. black strap molasses
1/4 c. finely ground fresh ginger - no need to peel
1/2 c. coconut or cane sugar
1 tsp. vanilla
1 Tbsp. canned milk

Directions:
In large mixing bowl cream together for 1 minute the solidified coconut oil, molasses, ginger, sugar and milk. In smaller bowl combine flours, baking soda and salt. On low speed combine flour mixture with liquid mixture 1/2 at a time. Mixing time is about 30 seconds total. Scrape down bowl and mix another 30 seconds. Refrigerate dough till it is solid enough to work into balls. Roll into balls 1 ½ Tbsp. each. Place on cookie sheet and sprinkle with sugar. Bake at 350º 10 - 12 minutes Cookies will spread and will be baked almost to the center. Cool and store in an air-tight container up to 7 days.
