3 eggs, beaten
2/3 cup oil
2/3 cup orange juice
1/2 tsp. vanilla
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup sugar
4 cups flour (maybe more if too gooey)

Directions:
Directions:
1. Preheat oven to 350º. In a mixer, beat eggs, and sugar. Add in oil, orange juice and vanilla. Blend in flour, baking powder and baking soda. This is where you have to decide if you need more flour. Don't be afraid it's a forgiving dough (unlike some people) and be sure you are able to work the dough with your hands. Oh, make sure you wash your hands while singing happy birthday, twice. Thanks covid for keeping everyone aware of their cleanliness.
2. Roll into balls or roll into snakes then tie off. You could also roll them into a snake and spiral it in the palm of your hand and place on cookie sheet 1 inch apart.
3. Bake for 8-12 minutes or until bottoms are golden brown, and tops are clearly cooked through Not doughy.
4. When cooled mix together 2 cups confectionery sugar and 1 Tbsp butter and 1 Tbsp anise or almond extract. If its too runny add more sugar. Dip tops of cookies into frosting or spoon on top.
5. Sprinkle with nonparrels or any type of colored sugar onto the frosting.
