Sugar Cookies


Ingredients:

2 Cup Unsalted Butter, softened
2 C Granulated Sugar
2 Egg
1 Tb Vanilla

6 C AP Flour
4 tea. Baking Powder

Directions:
Directions:
Preheat oven to 400º

In mixing bowl, cream butter with sugar until light and fluffy.

Beat in egg and vanilla.

Add flour and baking powder to butter mixture 1 cup at a time, mixing after each addition.

Chill dough.

Divide dough into 2 balls
On a floured surface, roll each ball into 1/4" thick.

Dip cookie cutter in flour before each use.

Bake cookies on ungreased cookie sheet 8-12 minutes or until cookies are lightly browned

Cool on racks.
Make 4 dozen medium size cookies
 

Royal Icing

Wilton Meringue Powder

3 Tb Wilton Meringue Powder
4 cups Powder Sugar
6 Tb warm water*

Beat all ingredients until icing forms peaks (7-10 minutes at low speed with a heavy- duty mixer, 10-12 minutes at high speed with a hand-held mixer).

Makes 3 cups
* for stiffer icing, use 1 tablespoon less water


Chefmaster Meringue Powder

1/4 C Meringue Powder
1/2 C cold water

Mix on low speed until frothy. Gradually add

4 C of sifted powder sugar

Beat at medium speed then high speed until soft peaks form and icing is fluffy. If using, add food coloring and stir until evenly distributed. Transfer to pastry bags or cover your bowl tightly with plastic wrap directly touching the icing surface until ready to use.

Separate into numerous bowls and mix colors.
Place some in piping bags.
Decorate cookies

Before Christmas we would decorate cookies with the cousins. I would make the cookies ahead of time and we would then all get together to decorate.

I found it best to line the table with a disposable table cloth and have the kids decorate on a plate. Then down the middle of the table are numerous drying racks for all the wonderfully decorated creations.
