For Ganache:

3- 5 oz good quality Chocolate (like 57% semi sweet)
¼ Cup Heavy Cream

For Cookies:

2 Cups All Purpose Flour
6 TBSP Cocoa Powder
1 TSP Baking Soda
½ TSP Kosher Salt
4 oz Semi Sweet Chocolate (50%-60%)
¾ Cup (1½ Stick) Butter
1 Cup Brown Sugar
½ Cup Granulated Sugar
2 Eggs
2 TSP Vanilla
(If desired rainbow sprinkles or rainbow chips)

Start by chopping chocolate for ganache. Place in heat safe bowl.
Warm cream in small sauce pan DO NOT BOIL. Let sit 30 seconds then pour over chopped chocolate pieces. Whisk gently starting on the center working your way out in a circle motion. Cool 20-30 minutes then transfer Ganache into a piping bag to place on parchment paper for flat round centers and freeze 30 minutes.
Next cookies, whisk together flour, cocoa, baking soda, and salt then set aside.
Gently melt chocolate in microwave in 20 second intervals just until melted.
Place butter and sugars in stand mixer bowl beat together for 2-3 minutes. add egg n mix until eggs blended in. Add vanilla, mix well. Add lukewarm melted chocolate mix on low speed. Place plastic wrap on dough, place in fridge roughly 30 minutes.
Preheat oven to 350º. Use a small cookie scoop to make dough balls (2 balls equal 1 cookie). Place dough balls on lined baking sheet flatten and add 1 ganache piece then top with 2nd flattened dough ball. Seal the edges around ganache. Pour sprinkles in bowl press each cookie top in sprinkles. Leave 3-4" gap between cookies for expansion. Bake 8-12 minutes. Can leave in airtight container at room temperature for 1 week.

These are a fun cookie, Very time consuming but well worth the while. This is a great project with the kiddos.
