1½ C brown sugar
¼ lb (1 stick) butter
5½ T flour
4 egg yolks, beaten (reserve egg whites for meringue)
1½ C milk
⅛ tsp salt
1 tsp vanilla

Directions:
Directions:
Melt brown sugar and margarine together. Add flour. Stir until smooth then add egg yolks mixed with milk and salt. Bring to a boil and cook 10 minutes, stirring constantly. Remove from heat and stir in vanilla. Pour into baked 9-inch pie shell.
 

Meringue

4 egg whites, beaten
8 T sugar
¾ tsp cream of tartar

Directions:
Directions:
Beat egg whites, add sugar gradually and cream of tartar. Add to top of butterscotch. Brown in a 350º oven until light brown.
