2 eggs
⅔ c. vegetable oil
2 tsp. vanilla
1 tsp. grated lemon rind or lemon extract
¾ c. sugar
2 tsp. baking powder
2 c. flour
½ tsp. salt

Directions:
Directions:
Preheat oven to 400º.
In large bowl, beat eggs with a fork until well blended.
Stir in: vegetable oil, vanilla, lemon extract. Then blend the sugar into the mixture until it thickens.
Sift together and stir in the flour, baking powder and salt.
Drop by teaspoons, about 2 inches apart on an ungreased cookie sheet. Flatten with the greased bottom of a glass dipped in sugar (or colored sugars/sprinkles).
Bake until delicate brown (about 8-10 minutes).
Remove immediately from cookie sheet and cool.
