Ingredients: Cookie Base: 1 box Devils Food Cake (unprepared) 1/3 cup vegetable oil 2 large eggs
Frosting: 8 ounce package cream cheese, softened 1/2 cup (1 stick) butter, softened 2 cups powdered sugar, or up to 4 cups 1 teaspoon good quality vanilla 1 teaspoon fresh lemon juice, optional 1/4 to 1/2 teaspoon kosher salt

Directions:Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper or a silpat. In a large bowl or stand mixer, beat together the cake mix, oil and eggs. Mix until combined. Use your hands to roll the dough into balls that are a little smaller than a golf ball. Place them about 2 inches apart on the baking sheet. Bake at 350 for 9-11 minutes. Take them out when they have just barely stopped shining on top. Make the rest of the dough into cookies and bake. Clean out your mixing bowl (or get a new one) and make the Cream Cheese Frosting. I used 2 cups of powdered sugar, but you can use more to taste. Use a spatula or knife to spread frosting on the bottom of a cookie. Top with another cookie. |

Notes: When I stayed at Marietta & Gary's in the summer to watch their kids, she would leave me notes asking me to make certain things. We all used to love these, the kids loved helping put them together. Now, my harvest crew loves them, they are super soft out of the freezer.
