2 eggs
1 c. oil
1 c. brown sugar
1 c. whole wheat flour (or GF flour)
1 c. bran (or ½ c. ground flax + ½ c. oat flour for GF)
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 T. vanilla
2 c. oats
1 c. unsweetened coconut
¾ c. sesame seeds
1 c. raisins
½ c. sunflower seeds
1 c. chocolate chips

Directions:

Blend well the eggs, oil, & brown sugar. Add the next 6 ingredients (up to vanilla) and mix. Add the remaining 6 ingredients and mix well. Batter will be stiff - KitchenAid works well. Bake on ungreased cookie sheets (or parchment paper) @ 350º for 15 minutes or until lightly toasted. Great served warm!

June Minnich used to make these for us years ago. You and Parker love the gluten-free/dairy-free version I make. Recipe makes a lot, so I often make half a batch. Not sure why they're called Cowboy cookies, but appropriate since I started making them for you when you moved to Wyoming!
