Directions:Combine butter, sugar and egg and beat until light and fluffy. Stir in flour, baking powder, orange juice and vanilla then stir until smooth. Refrigerate dough for 2 - 3 hours. Roll out dough as thin as possible on a floured surface. Cut out shapes with cookie cutters and bake on an ungreased cookie sheet at 400º for 6 - 10 minutes or until edges are browned.
For optional icing "wash": Mix confectioner's sugar and a few drops of almond extract. Add a few drops of water until the icing is thin and runny. Add food coloring if desired. Brush on with pastry brush (or kids' paintbrush). Let icing harden. Before icing hardens, you can decorate with sprinkles, nuts, coconut, chocolate chips, raisins, etc. |

Notes: This recipe is from a woman I worked with in Westfield, NJ. She used to make a big plate at Christmas with beautiful designs. These are like a sugar cookie but with a buttery flavor and a delicious hint of orange.
