1 cup margarine
¾ cup firmly packed light brown sugar
3 eggs
2 cups unsifted flour
1 tsp baking soda
½ tsp salt
1½ cups rolled oats
1 (9 ounces) package Condensed Mince Meat, crumbled
1 cup finely shredded carrots
1 cup chopped nuts

Directions:
Directions:
Preheat oven to 375º F. In a large mixer bowl, cream together margarine and sugar; beat in eggs. Combine flour, baking soda, and salt; gradually add to creamed mixture. Stir in oats, mincemeat, carrots, and nuts. Drop by rounded spoonfuls onto lightly greased baking sheets; bake 8 to 10 minutes or until golden brown. If desired, spread Cream Cheese Frosting on top of cooled cookies.

Cream Cheese Frosting

3 ounces cream cheese
2 - 1/2 cups sifted confectioners' sugar
1 tbsp milk
1/2 tsp vanilla

In a small bowl, beat cream until smooth. Stir in the remaining ingredients until smooth.
