1½ cups all purpose flour
1 tsp. baking powder
½ tsp. baking soda
pinch of salt
½ cup of softened butter
¾ cup sugar
1 egg
¾ cup sour cream
½ tsp. vanilla
2 cups diced rhubarb

Directions:
Directions:
Preheat oven to 350º and place parchment paper to cover baking sheets
Cream butter and sugar until light and fluffy
Add egg and then sour cream and vanilla
Mix flour, baking powder, baking soda and salt together and add in third batches to the creamed mixture until all combined
Stir in rhubarb
Drop by tablespoon onto prepared baking sheets
Bake 10 to 12 minutes or until edges of the cookies start to brown and tops have some colour
Cool and serve
