16 Tbsp. unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar
2 large eggs
2 tsp. vanilla extract
2 ½ cups rolled oats, old-fashioned or quick cooking
2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
¾ tsp. salt
2 ⅔ cups semisweet chocolate chips (1 ½ 12 oz. bags)
½ - 1 cup chopped nuts (optional)

Preheat oven to 375º. Line two or more baking sheets with parchment paper.

Beat together the butter and sugars, then beat in the eggs and vanilla.

Grind the oats in a blender or food processor until they've turned to a coarse powder; add to the sugar mixture along with the flour, baking powder, baking soda, salt, chips and nuts. Beat gently until well combined.

Drop the dough by tablespoonfuls onto the prepared baking sheets. Leave about 1 ½" between each ball for spreading.

Bake cookies for 14-15 minutes until they're very lightly browned. Remove them from the oven and cool right on the pan. If you need the pans for the next batch, transfer the cookies to a rack to cool.

Chilling the dough for 30 minutes before baking yields best texture.These are great dunking cookies - a bit crunchy and a bit chewy. The recipe is from the King Arthur Baking website.
