Almond Apricot Cookies Recipe

1 c. flour
1 tsp baking soda
1 c butter or margarine
¾ c packed brown sugar
½ c white sugar
1 egg
½ tsp. almond flavoring and 2 tsp water (or 1 TBSP Amaretto)
1 c chopped or diced dried apricots
½ c sliced almonds (or finally chopped almonds
2 1/2 cups regular or quick oats
1/2 tsp salt

Glaze
2 c powdered sugar
¼ tsp almond flavoring and 2 TBSP water or (2-3 TBSP Amaretto)

Directions:
Directions:
Beat softened butter or margarine, brown and white sugar well until fluffy. Add egg and flavoring, mix well. Add flour, and baking soda, salt, and oats and mix well. Stir in apricots and almonds.

Drop tsp of cookie mixture onto ungreased cookie sheet and bake at 375 8-10 min till done. Cool for 1 min. and remove from cookie sheet. After baking, press cookies slightly and let cool before glazing.

Stir powdered sugar and almond flavoring and small amount of water to make icing to drizzling consistency and drizzle over cookies. (Makes about 5 1/2 dozen cookies depending on how big tsp. of dough used)
