Ingredients: 1 Cup sugar 2 Eggs ½ Teaspoon flavouring (vanilla or lemon or a combination of the two) ½ Teaspoon salt 2½ Cups all-purpose flour 1 Teaspoon baking powder
Vanilla Butter Icing: 1/3 Cup soft butter or margarine 3 Cups confectioners’ sugar 1 ½ Teaspoons vanilla (vanilla or lemon or a combination of the two) About 2 Tablespoons milk Food coloring – if desired Sugar sprinkles – if desired

Directions:Temperature: 400 degrees Mix the following 5 ingredients thoroughly:¾ Cup soft shortening (part butter) 1 Cup sugar 2 Eggs ½ Teaspoon flavouring (vanilla or lemon or a combination of the two) ½ Teaspoon salt
Stir together and stir in the following 2 items: 2½ Cups all-purpose flour 1 Teaspoon baking powder Chill dough at least 1 hour. Roll out 1/8” thick on floured board. Cut into desired shapes. Place on ungreased baking sheet. Sprinkle with sugar if you are not going to ice them afterwards. Bake until delicately golden. Do not ice until cookies have thoroughly cooled. Bake 6 to 8 minutes
Vanilla Butter Icing: Blend butter and sugar. Stir in vanilla, milk and, if desired, food coloring. Beat until icing is smooth and of spreading consistency. Ice cookies and add sprinkles, if desired. |
