1/2 cup butter
3/4 cup white sugar
1 large egg
1 tbsp lemon juice freshly squeezed
1 tbsp lemon zest (fresh)
1 tsp vanilla extract
2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2 ½ drops of yellow food colouring (optional)
1 cup icing sugar

Directions:
Using a hand mixer or a stand mixer, beat the butter and sugar together until light and fluffy (about 3 minutes). Add in the egg, lemon juice, lemon zest and vanilla. Continue beating on low speed until well combined. Next, add the flour, baking powder, salt, baking soda and food colouring. Beat on low speed until no flour patches remain.

Chill the dough for at least 1 hour in the refrigerator. Preheat oven to 350ºF and line 2 large baking sheets with parchment paper or silicone mats. Set aside.

After chilling the mixture, roll into teaspoon size balls and dip each ball in the icing sugar. Heavily coat each ball and don't shake off excess. Place the balls on a baking sheets 2 inches apart.

Bake in oven for 8-10 minutes or until the edges are very lightly browned. The centres will appear soft. Let cookies cool, then store the cookies in an airtight container for up to 5 days.

Lemon lovers will absolutely love theses cookies. To change up add fresh orange juice and orange rind with orange colouring.
