4 large cups all-purpose flour (sifted 4 times)
1 cup granulated sugar
1 lemon rind (grated)
1/2 lemon juice (1/2 of lemon)
1 egg yolk (save white)
1 pound butter
4 eggs cooked (hard boiled yokes grated)
1/2 teaspoon vanilla
1 cup pecans chopped fine

FILLING:
1 box/bag apricots
1 Tablespoon Karo syrup
Splash of water

Directions:
Directions:
Preheat oven to 350ºF.

Put sifted flour, sugar, lemon rind, lemon juice, vanilla, egg yolks and raw egg in a bowl. Mix together. Kneed really well and let set 1/2 hour.

Beat egg whites in a bowl until stiff.

Put pecans in a bowl.

Roll dough out and use cookie cutters. 2 of each cut (1 bottom; 1 top). Use thimble to cut hole in center of top. Place 1 teaspoon apricot on bottom. Put on top and whip with egg whites. Sprinkle with nuts.

Bake at 350ºF for 20 minutes or until brown. Sprinkle with powder sugar and cool.

FILLING:
Slowly cook down apricots, Karo syrup and water.
