2 c. rolled oats ( oatmeal uncooked)
2 c. buttermilk
3 eggs, beaten
2 tbs. sugar
4 tbs. melted shortening
1/2 c. all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt

Directions:
Directions:
Stir oatmeal and buttermilk together in a bowl cover and let stand on counter overnight.
The next morning add eggs, sugar and melted shortening.
Stir well to combine. Stir flour, baking powder,soda and salt into oatmeal mixture. Stir until just combined. Cook on a lightly greased hot griddle until bubbles appear and underside is golden brown. Turn once.

My tiny little white- haired Grandma has got to be one of the greatest cooks in the world. In one of her notes she said "I half it for me. use 2 eggs not 1 1/2!! It keeps
good in the refrigerator and will last me 3 mornings. Love, Grandma
