2 ¼ c all-purpose flour
¾ c light brown sugar
1 large4 egg
1 c softened, unsalted butter
2 t vanilla extract
1 t baking powder
½ t salt
½ c granulated sugar for rolling

Directions:
Directions:
Pre-heat oven to 350º F and line a baking sheet with parchment paper. In a large bowl, crema together butter and brown sugar with an electric mixer. Scrape down sides of bowl, and add egg and vanilla and mix until incorporated. In a separate bpwl, stir together the flour, slat, and bakign powder. Add too butter mixture and mix until just combined. Scoop dough our in 1 ½ T and roll into balls. Roll balls in granulated sugar.
Place on baking sheet and flatten gently with a fork in a criss cross. Chill for 30 minutes, then bake until centers are set but the cookie hasn't browned,10 - 12 minutes.
Allow to cool on baking sheet for 3 minutes before removing to a wore rack to cool completly.
