1 ¼ sticks butter, room temperature
¾ cup brown sugar, packed
¼ cup granulated sugar
1½ tsp. vanilla extract
1 egg, room temperature
2 cups all-purpose flour (scooped lightly, just don’t pack it in there tightly)
1 box instant vanilla pudding (3.4-oz) not the cook & serve
1 tsp. baking soda
½ tsp. salt
¾ cup semi-sweet chocolate chips (plus more for after baking)
1 cup white chocolate chips (plus more for after baking)
1 cups mint M&M’s, divided

Directions:
Directions:
In a mixing bowl, beat the butter, sugar and brown sugar together until fluffy. Add egg and vanilla; beat well. Add in the flour, pudding mix, baking soda and salt. Slowly stir at first and then beat until all the ingredients are completely incorporated. Slowly stir in chocolate and white chips. Fold in ½ of the M&M’s. Remove beater cover and refrigerate overnight. The next day preheat oven to 350º. Roll dough into balls; it will be firm and you will need to press it all together. Place dough balls on the baking sheet and bake for 9-12 minutes. Remove and immediately top each cookie with a few extra chocolate chips, white chocolate chips and M&M’s before they cool. Leave cookies on the baking sheet to cool. Repeat this process with the remaining dough.

It’s important to not place dough on a hot cookie sheet. Start with a cold cookie sheet with each batch to ensure that the cookies bake consistently.
