Salad:
6 medium cooked potatoes, chopped
1/2 small onion, finely chopped
1 small grated carrot
3 hard-cooked eggs, coarsely chopped
1-1/2 tsp. celery salt
1/4 tsp. paprika

Dressing:
1/3 cup cider vinegar
2 eggs, slightly beaten
1/2 cup sugar
1 tbsp. dry mustanrd
1 tsp. flour

Directions:
Directions:
Combine salad ingredients except Dressing in bowl. Make dressing, pour it hot over the salad, chill. .

Dressing:
Measure cider vinegar into 1/2 cup measure. Add water to make 1/2 cup. Put in heavy saucepan with slightly beaten eggs, sugar, dry mustard, and flour. Cook, stirring over low heat, until thickened.

My grandmother Theresa Bradt (Irene Savage's mother) made this recipe when I was probably a teenager, and I asked her for the recipe. I specifically remember her telling me about how to measure the cider vinegar and water for the dressing. Grandma made it more than once, and so have I. The sweet cooked dressing makes the salad.
