1 c. butter (2 sticks), softened
1 c. granulated sugar
⅔ c. firmly packed brown sugar
1 c. peanut butter (natural adds great flavor)
1 tsp. vanilla extract
2 eggs
2 c. flour
1 c. oats (I like old-fashioned)
2 tsp. baking soda
½ tsp. salt
1 12-oz. bag semisweet chocolate chips

1. Preheat oven to 350°.
2. Beat butter, sugars, peanut butter, vanilla, and eggs in large bowl with wooden spoon until creamy and well blended.
3. Mix in flour, oats, baking soda, and salt until well blended.
4. Stir in chocolate chips.
5. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet or parchment paper. (I like to use my cookie scoop.)
6. Bake 10-12 minutes or until light golden brown. Cool 1 minute before removing from cookie sheet.

I got this recipe in the early 1990’s from my boss in Wyoming, Jack Lloyd. They have always been a big hit, & they are especially good as “chip-wiches” w/vanilla ice cream sandwiched between them. These were another cookie I made gluten-free for your wedding, & they were almost just as good.
