2 3/4 cups flour
1 tsp baking soda
1/2 tsp salt
1 1/4 tsp cinnamon
1/2 tsp ginger
1 cup of butter
3/4 cup of sugar
2 eggs
2/3 cup of light molasses
1/2 cup milk

Directions:
Directions:
Heat oven to 375º. spray cookie sheets with baking spray or grease and flour
Mix flour, baking soda, salt, cinnamon, and ginger in mixing bowl.
Mix butter and sugar, beat in eggs until light and fluffy. Add molasses and blend.
Add flour and mix alternately with milk. Refrigerate covered for 1 hour.

Drop by tbs. 2 inches apart. Bake for 10 minutes until surface springs back when pressed.

If made into sandwich cookies, can layer with ginger cream.

Ginger cream: 1/2 cup of butter, 3 cups of confectioners sugar, 1 1/4 tsp of ginger
2-3 tbs milk, 1/4 cup of light molasses.

This is a recipe passed down by Grandma Shumway. People don't bake with molasses much these days, but it is rich with nutrients like iron, potassium and magnesium. So yummy with health benefits!
