½ c. poppyseeds
1 c. milk
1 tsp. vanilla
¾ c. butter
1 ½ c. sugar
2 c. flour
2 tsp. baking powder
½ tsp. salt
4 egg whites

Cake filling:
¾ c. sugar
4 egg yolks
2 tbsp. corn starch
¼ tsp. salt
1 ½ c. milk
2 c. chopped nuts (optional)
1 tsp. vanilla

Directions:
Directions:
Soak poppyseeds overnight in 1 c. milk & 1 tsp. vanilla.
Cream butter. Gradually add sugar to creamed butter (cream after each addition of sugar).
Sift together flour, baking powder and salt.
Start and end with flour, blend in alternately flour and poppyseed mixture to creamed mixture.
At room temperature, beat egg whites until stiff.
Add egg mixture to cake mixture.
Pour into 2-8" layer cake pans prepared with wax paper and greased.
Bake at 350º for 30 minutes or if glass cake pans, 325º.
Cool for five minutes in pans.

FILLING FOR CAKE (yummy)
Mix sugar, egg yolks, corn starch, salt and milk.
Cook in double boiler or stove top stirring constantly for five minutes. Add nuts if desired and vanilla.
Spread on cool cake.

I was named after my great-grandma Genevieve. She made her famous poppyseed cake for my grandpa's birthday every year. My grandpa had to share his birthday cake with his brother since their birthdays were close together. Even though my grandpa hated sharing his cake, every one loved grandma's poppyseed cake recipe. She made it every year for my grandpa, even when he was an adult.
